As winter sets in, there is nothing better than enjoying delicious seasonal cuisine in a cosy candlelit setting. Set in 10 acres of gardens close to Leamington Spa in Warwickshire, the four AA Red Star Mallory Court Country House Hotel and Spa is a romantic Lutyens-style house with mullioned windows and roaring log fires, known for its exceptional dining credentials.

The hotel’s flagship restaurant, The Dining Room, holds 3 AA Rosettes and is expertly managed by Head Chef Paul Evans. Having joined Mallory Court in 2017, Paul’s passion for cooking is evident to all who meet him. He spent over five years working with James Sommerin in South Wales, progressing from demi chef to sous chef, and was part of the team which retained a Michelin star. Since joining Mallory Court, Paul has built up a wonderful collection of loyal local suppliers and has created inventive dishes which mix modern techniques and trends with long-forgotten traditional recipes.

The frequently changing seasonal menus are very much inspired by the produce of the hotel’s kitchen garden. This year’s bounty includes damsons, berries, courgettes, chillies, black peppers, tomatoes, lemon verbena, salt wort, kale, cavolo nero, French beans, artichokes, figs and crab apples. Paul’s menus feature a variety of local produce too, including a standalone vegetarian menu, as well as rich pickings for vegans. Some of his favourite winter dishes include Loin of Salisbury Plain venison, butternut squash, home grown salsify. Mallory garden salad, salt baked vegetable, Wiltshire truffle curd, Fosseway honey reduction. Baked apple press with caramelised puff pastry, milk ice cream and nutmeg.

Head Chef, Paul Evans, says: “Winter is my favourite time of year in the kitchen – there’s a real heartiness to the food, game is a feature of the menu with rich sauces, it’s generous food that gives you a warm hug and allows me to showcase my creativity getting the best colour and freshness out of every dish.”

He continues: “I like to make people smile through my food and I want each meal to be memorable. I try to focus on having three key flavours in each dish and ensuring that the very best ingredients are sourced.”

The Dining Room at Mallory Court is open daily for dinner (6.30 pm – 9 pm) and on Sundays for lunch (12.00 pm – 2.30 pm). Menus are priced from £39.95 pp for a three-course Sunday lunch, £65 pp for a three-course Seasonal menu and £75 pp for a six-course Tasting Menu.

The hotel opened its state-of-the-art Elan Spa in 2017 – the first spa to be built in Warwickshire for 10 years.
