Extremadura Recipe – Tomato Soup with Figs
Extremadura is a stunning and relatively little-known region in southwest Spain, nestled alongside the Portuguese border and easily accessible from Madrid, Seville and Lisbon. Apart from a rich history – Romans, Christians, Moors and Sephardic Jews, this region is deeply rooted in agriculture, which is reflected in its modern take on traditional gastronomy.
“What makes Extremadura special is partly the tradition. The region has stuck to its roots and is still producing ingredients the same way it was 100 years ago. This consistent standard of excellence has made sure that the produce from the region is alive with rich flavours and colours that are unique to Extremadura” – London chef and restaurateur, José Pizarro (a native of Extremadura himself).
Until you can visit Extremadura yourself for a taste of the fresh and delicious cuisine, we’re happy to share a few recipes with you this week, starting with this authentic tomato soup with figs. Delicious!
A full Extremaduran menu will be available from 20th to 27th March at Pizarro Restaurant (194 Bermondsey Street, SE1 3TQ), while José’s two other restaurants – José Tapas (104 Bermondsey Street, SE1 3UB) and José Pizarro Broadgate (36 Broadgate Circle, EC2M 2QS) will be serving special tapas from Extremadura.
Diners at Pizarro, the chef’s flagship restaurant, will have a chance to enter a prize draw to win a trip to Extremadura. The lucky winners will be offered a three-night stay for two people, including 4-star accommodation, flights, car hire and a guided tour.
In addition, José Pizarro will donate £1 to Action Against Hunger for every meal ordered from the special Extremadura menu.
